/&gt;海鮮烹煮前維持鮮度及衛生是品嘗甜美海味的重要關鍵，從運送、保鮮、冷凍、甚至是退冰、放血、宰殺的方式都會影響漁獲的口感。&lt;br /&gt;（1）不論是購買魚類或其他海產，若非打算買活體回家自行處理，都要用冰塊或保冷袋包裹漁獲，以-4℃~2℃的低溫維持鮮度。&lt;br /&gt;（2）漁獲海產即使放在冷凍庫中也有保存期限，最好是在1週內食用完，放置過久鮮味流失，口感自然不佳。&lt;br /&gt;（3）漁獲解凍時，若能放於冷藏室最上層的低溫位置，讓其緩慢退冰，對於保留漁獲的口感與風味有很大的幫助。&lt;br /&gt;（4）入鍋烹煮前務必得將漁獲清洗乾淨，不讓穢物血水殘留，才符合衛生。&lt;br /&gt;（5）因自來水中含有微少的氯，易讓鮮味流失，並且經自來水洗淨後的漁獲再放入冷凍庫較易變黑，所以，建議以鹽水清洗漁獲，且與水接觸的時間也不宜過長。&lt;br /&gt;該如何分辨魚的新鮮度？眼到：魚鱗完整，魚眼清澈不混濁，魚鰓呈鮮紅色，魚腹完整沒有破裂，魚皮色彩鮮明，有光澤。鼻到：用鼻子聞聞看，沒有腥臭味。手到：用手指按壓，肉質結實有彈性。另外，選擇牡蠣時，要選形狀完整、汁液不混濁、肉質有彈性的為佳；蝦子選擇光澤、頭和身體不分離的為佳。&lt;br /&gt;避免食物中毒有幾個方法，很簡單，首先，魚一定要新鮮；再來，如果是熟食的話，一定要熟透；熟食和生食要分開處理，避免交叉污染，因此熟食絕對不能被水族箱的水噴到；還有，料理環境要衛生，看看師傅的手、沾板、抹布、刀子有沒有常常洗，甚至是不是把刀子和抹布放冰箱，低溫防菌。夏天是旅遊玩耍的好時機，千萬別讓食物中毒給破壞好氣氛。&lt;br /&gt;那味道一直藏在我的味蕾記憶裡。&lt;br /&gt;&lt;br /&gt;今天早上去了趟&lt;b&gt;傳統市場&lt;/b&gt;，&lt;br /&gt;無意中看見有人販售&lt;b&gt;青辣椒&lt;/b&gt;，&lt;br /&gt;於是很小氣地跟老闆買了6條肥肥短短的&lt;b&gt;青辣椒&lt;/b&gt;，&lt;br /&gt;反正我想失敗機率應該還蠻高的，&lt;br /&gt;不用買太多回來獨自惆愴(笑）！&lt;br /&gt;買完了&lt;b&gt;青辣椒&lt;/b&gt;又跑去&lt;b&gt;豬肉攤&lt;/b&gt;買了30元絞肉。&lt;br /&gt;&lt;br /&gt;回到家後，&lt;br /&gt;查了網路上的&lt;b&gt;辣椒鑲肉&lt;/b&gt;做法，&lt;br /&gt;不外乎將青椒辣去籽、去蒂頭，&lt;br /&gt;然後把醃過的絞肉往內塞，&lt;br /&gt;最後再用油煎到熟或用燉的也OK，&lt;br /&gt;我理想中的&lt;b&gt;辣椒鑲肉&lt;/b&gt;較類似&lt;b&gt;頭盆菜&lt;/b&gt;那種多汁軟嫩的&lt;b&gt;冷盤&lt;/b&gt;口感，&lt;br /&gt;最好絞肉的口感不要跟外層的&lt;b&gt;青辣椒&lt;/b&gt;差異太大，&lt;br /&gt;因此我想先用油煎過後再來一點中火&lt;b&gt;紅燒&lt;/b&gt;，&lt;br /&gt;讓絞肉熟透而青辣椒經過慢熬後變得軟而不爛，&lt;br /&gt;這麼一來牙齒咬去時才不會有外面硬裡面軟的狀況。&lt;br /&gt;&lt;br /&gt;值得一提的是，&lt;br /&gt;這種靈機一動的料理總是不教人失望，&lt;br /&gt;做好後放涼，&lt;br /&gt;等到中午食用時發現口感跟我想像中差距不遠，&lt;br /&gt;吃到剩最後一條鑲肉時敢緊拍照留念，&lt;br /&gt;看來我真是適合這種不按牌理出牌的料理方式啊！&lt;br /&gt;&lt;br /&gt;&lt;b&gt;《不負責食譜》 &lt;/b&gt;&lt;br /&gt;&lt;b&gt;材料：&lt;/b&gt;&lt;br /&gt;中等長度偏肥的青辣椒、細絞肉、蔥、薑、鹽、糖、&lt;br /&gt;玉米粉（取代太白粉）、香油、醬油&lt;br /&gt;&lt;br /&gt;&lt;b&gt;前置作業：&lt;/b&gt;&lt;br /&gt;1.將蔥、薑剁成細碎狀，摻入細絞肉拌勻&lt;br /&gt;2.再倒入少量的鹽、糖、醬油與幾滴香油拌入1&lt;br /&gt;3.再放入少許玉米粉來增加絞肉與青椒的密合度，最後和勻醃約15到20分鐘&lt;br /&gt;3.將&lt;b&gt;青辣椒&lt;/b&gt;洗淨後把蒂切除，接著取出裡面的籽&lt;br /&gt;4.用刀切除辣椒內部類似膜的纖維拿掉&lt;br /&gt;5.將醃好的絞肉塞入挖空的辣椒裡填滿&lt;br /&gt;&lt;br /&gt;&lt;b&gt;料理方式：&lt;/b&gt;&lt;br /&gt;1.起油鍋，放入鑲好肉的青辣椒中火微煎，記得滾動讓辣椒均勻受熱&lt;br /&gt;2.煎到&lt;b&gt;青椒&lt;/b&gt;與絞肉都逐漸變色了&lt;br /&gt;3.接著加入2大湯匙的水量與一大湯匙的醬油與些許冰糖蓋上鍋蓋燜燒&lt;br /&gt;4.紅燒到青椒變得有點透明感或者用筷子刺很輕易地穿透&lt;br /&gt;5.最後轉大火收汁，因為湯水沒有加很多所以很快便可起鍋了&lt;br /&gt;&lt;br /&gt;&lt;b&gt;::後記::&lt;/b&gt;因為是隨亂做，份量全憑經驗揣測，最好就是自己用舌頭嚐看看&lt;br
